For all of the times that I’ve made banana bread, I’m surprised I’ve never shared the recipe I use! It’s super simple, and one that I can thank my sister in law for. I believe it was the Christmas just after I got married that she gifted me a recipe book that had a bunch of recipes that she would think I’d like, along with family recipes (my mother in law’s lasagna is amazing!).
When I had some ripe bananas to bake up, this is the first recipe I gravitate towards. As mentioned in the title, it is both easy and delicious.
Ingredients
2-1/2 cups flour
1 cup sugar
3-1/2 tsp. baking powder
1 tsp. salt
3 tablespoons vegetable oil or canola oil
3/4 cup milk
1 cup mashed ripe bananas
1 egg
1 cup finely chopped nuts (optional) – I tend to omit these because David doesn’t like nuts in baked goods.
Directions
Heat oven to 350 degrees. Grease and flour 9x5x3″ loaf pan. Measure and mix all ingredients in mixing bowl. Beat on medium speed for 1 minute. Bake 55-65 minutes (I did mine at 60 minutes, and I have an electric oven). Done when wooden toothpick inserted comes out clean. Remove from pan. Cool on rack.
The best part is the end piece, still warm, with some butter. Add a cup of coffee you’ve got yourself a delicious little afternoon snack.
