There really is nothing more satisfying than a delicious, right-out-of-the-oven chocolate chip cookie. I had a surplus of eggs and decided to whip up a favorite of David’s (without the nuts of course). I decided to reference one of my favorite cookbooks: The Taste of Home Cookbook for the particular recipe.
Still figuring out my camera settings. We have direct southern light and I’ve been trying to work with that to make the pictures come out not too bright or too dark. Case in point:
Chocolate Chip Cookies
Ingredients
1 cup butter, softened
1 cup shortening (I used Butter-flavored Crisco)
2 cups packed light brown sugar
1 cup sugar
4 eggs
2 teaspoons vanilla extract
4-1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
2 cups (12 ounces) semisweet chocolate chips
Directions
1) In a large mixing bowl, cream the butter, shortening and sugars until light and fluffy. Beat in eggs and vanilla.
2)Combine the flour, baking soda and salt; add to creamed mixture and mix well. Stir in chocolate chips (dough will be sticky). Drop by tablespoons 2 in. apart onto greased baking sheets.
3) Bake at 350* for 10-12 minutes or until lightly browned. Remove to wire racks to cool.
Yield: about 11 dozen
This does make a ton of cookies. I ended up making mine too big so it was more like 4 dozen; next time I will halve the recipe.
