Cookies & Crackers Pound Cake

Happy Animal Crackers Day!

When it comes to baking, I tend to steer towards easier recipes, or going back to tried and true recipes that I can almost make by memory. You can always find a box of vanilla cake mix, a bag of chocolate chips, and some sticks of butter-flavored Crisco in my pantry. For this recipe, I used the cake mix and made it into a pound cake. This is as simple as it gets and that’s pretty much how I roll.

Cookies & Crackers Pound Cake

Ingredients
One box vanilla cake mix
3 eggs (I substituted 2 eggs with 1/2 cup egg whites)
1 cup water
1/4 cup vegetable oil
1 quart sized Ziploc bag of Oreos, crushed (I used Wal-Mart brand)
1 quart sized Ziploc bag of animal crackers, crushed (I used Stauffer’s brand)

Directions
1.) Mix the vanilla cake mix according to the package.
2.) Add the crushed cookies to the mix.
3.) For pound cake, back at 350* for 45-55 minutes. I baked it for 50 minutes and it came out perfect. I also cut into it while it was still warm and it was a bit crumbly. I recommend waiting until it cools before cutting!

I can say with 100% certainty that you will never find overly complicated or even intricately devised recipes on this blog. I like to keep things simple and quick. Even though David is home during the week, he’s busy making sure Eleanor is well taken care of and providing content for his YouTube channel (make sure to check out DavidPoz!). If there’s anything I can do to help with meal prep or cooking/baking, I will. And it’s fun to celebrate some of the food holidays. Smile
