Happy Sunday everyone!
One of my favorite blog posts to read are the ones that highlight the dinners that the respective blogger had put together for themselves and their family. I wish I could say that I take the ideas and run with them, but I’m hoping that if I contribute my own meals for the week, it might inspire me to actually “dog-ear” the recipes that I find and actually make them. 🙂
With that, here’s the past week of meals for our household!
When possible, we would have Eleanor eat a small portion of what we were eating. The only thing she didn’t eat was the roast.
Sunday – Meatloaf with broccoli and mashed potatoes
This recipe came from the Better Homes and Gardens: Our Best Recipes edition. It’s super easy to make and it’s a hit in our house!
Monday – Peppers & onions with brown rice
We have this meal at least once a week; my favorite combination is with kidney beans, Mexican shredded cheese, and tortilla chips.
Tuesday – Top round roast
David does the best job at preparing roasts. He rubs it with either coarse salt or a Kansas City steak rub. He then sears it on all sides on the cast iron, before putting it in the oven until it reaches an internal temp of 120*. Then he lets it sit for about 20 minutes, and it comes out as a perfect medium to medium rare (depending on the size of the roast).
Wednesday – Chicken and peppers stir-fry
Another favorite during the week! This time David cooked the chicken in the Crock Pot so that it would shred more easily. I mixed it with the teriyaki sauce from San-J. David and I found this at Jungle Jim’s in Fairfield, OH but haven’t been able to find it locally since. You can find it on Amazon!
Thursday – Steak and cheese quesadilla
This was a leftover kind of meal. We still had meat left from the couple of nights before, so I mixed it with some cheese and made a quesadilla.
Friday – Meat sauce with angel hair pasta
Another weekly staple! I absolutely LOVE how the house smells when the sauce is simmering. More often than not, I’m going for a second bowl. 😉
Saturday – Steak and cheese calzone and Buffalo wings
For anyone local to central Massachusetts, this is from Park Hill Pizza in Fitchburg. David loves their wings and they make a pretty darn good calzone as well. We get this meal about once or twice a month.
Along with the dinners, we try and add in some side salads for roughage.
